Coffee & Cocoa Cupcake

Finally try piping with 1M piping tip after buying it for so long! Quite satisfy with my 1st attempt on piping a big swirl on a cupcake :D

This will be my last posting for this month! Tomorrow me & my family with be away for whole of November..Happy baking everyone! :D










Ingredient (10 cupcakes)
  • 115gm butter
  • 90gm sugar
  • 110gm self-raising flour
  • 1 tbsp cocoa powder
  • 1 tbsp coffee granules (dissolves in 1 tbsp hot water)
  • 1/2 tsp chocolate emulco
  • 2 eggs
Method
  1. Place all ingredients in a mixing bowl. Beat on low speed briefly. Turn on high speed and beat for 3mins until smooth & creamy.
  2. Spoon batter in individual paper cups and bake in preheated oven at 180 deg cel for 15mins .
  3. Cool completely before frosting.

Cheese Frosting :
  • 200gm cream cheese
  • 50gm butter
  • 75gm icing sugar, sifted
  • 5 tsp lemon juice
Method : Beat cream cheese, butter & icing sugar till smooth. Beat in lemon juice to get a smooth & spreadable/piping consistency.

Happy 5th Birthday!

This is the first time my boy celebrate his birthday in school! Though is just a simple celebration, he get so excited about it :D kids are so easily contented :D

A 8" round cake...


Decorate with Cream Cheese Frosting and Pooh Bear Chocolate Transfer Image (Self-Made). The image not very well made as you can see some area are smudged.

Hot Walnut Brownie Cupcake

I like this idea of baking this cake in a teacup! Literally a Cake In A Cup ~ Cupcake! Would you like a cuppa of hot chocolate cake?? hehehe....


Ingredient
  • 115gm unsalted butter
  • 115gm dark chocolate, chopped
  • 2 eggs
  • 85gm brown sugar
  • 1/2 tsp vanilla essence
  • 115gm plain flour
  • 50gm walnuts, chopped.
Method
  1. Dissolve butter & dark chocolate over a pot of simmering water. Cool slightly.
  2. Whisk eggs & brown sugar until well blended. Stir in chocolate mixture & vanilla essence.
  3. Fold in flour & chopped walnuts.
  4. Grease ovenproof teacups and scoop in batter evenly (or use normal paper cups). Bake in preheated oven at 180 deg cel for 25mins.
  5. Dust with icing sugar & decorate with whole walnuts before serving.

Green Tea White Chocolate Cupcakes

Think no one can resist this cute little cupcakes :P My son was waiting eagerly while I was spreading the frosting on these green tea cupcakes. "Mummy...ready or not?" Me : "No...I still need to take some pictures..", "Mummy....why so slow?...." >.< So happy when he finally got to savour a cupcake and told me NICE! Kids are kids...anything taste sweet they will say nice hahaha...but this green tea chocolate cupcakes indeed taste moist and nice lah. Though only a teaspoon of green tea powder is added into the batter, the flavour is good! Moreover is so simple to make, just dump everything into mixer and blend, within less than 30mins, a batch of freshly bake cupcakes is ready on the table :D



Recipe adapted from Kevin Chai's Beautiful Cupcakes
Ingredient
  • 115gm unsalted butter
  • 85gm sugar
  • 115gm self-raising flour
  • 2 eggs
  • 1 tsp green tea powder
  • 50gm mini white chocolate chips
  • 100gm melted white chocolates for frosting, optional
Method
  1. Combine butter, sugar, self-raising flour and green tea powder into a mixing bowl. Beat on low speed till just combined. Turn on high speed and beat for 3mins till light & fluffy.
  2. Fold in white chocolate chips.
  3. Spoon batter into cupcases, bake in preheated oven at 180 deg cel for 20-25mins.
  4. Cool completely and frost with melted white chocolate and decorate as desired.
